Pineapple Chicken Fried Rice

Wash the exterior of the pineapple and drain the water. Cut off one-third of it lengthwise.

Use a tool to dig up the flesh of the pineapple. Do not dig out the skin. Cut the dug into small cubes.

Carrots and chicken breasts are diced and blanched with peas.

Add salt and a little pepper to the eggs, beat them well, heat oil in the pan, add the egg mixture and fry until cooked.

Pour in the blanched carrots, chicken breast and peas and stir fry for a while.

Add white rice.

Add an appropriate amount of salt and stir fry for a few minutes.

Finally, add the diced pineapple meat and stir-fry evenly over high heat.

Tips:
1. Use a spoon to dig out the pulp from the edge and then dig the inside, and drain the pineapple juice to avoid soaking the fried rice and affecting the taste.
