Poached Pork Slices

Prepare the raw materials

Tenderloin cut into slices

Add appropriate amount of soy sauce, sesame oil, chili oil, egg white, cornstarch to the meat slices, marinate for ten minutes

Finely chop ginger, garlic cloves, and green onions

Put the dried chili and dried Chinese pepper into the pot, slowly fry them on a low heat to get a fragrance, then let cool, cut the chili into sections and roll out with a rolling pin, and crush the Chinese pepper with a rolling pin.

Add appropriate amount of water to the pot, add appropriate amount of salt and a few drops of sesame oil to boil, add the small rapeseed to blanch the water, remove and put on a plate for later use

Add appropriate amount of oil to the pot, add green onion, ginger, and minced garlic, and saute until fragrant

Add appropriate amount of Pixian Douban, stir fry for red oil

Add boiling water and cook for a minute or two

Add the meat slices, quickly disperse the meat slices, cook on high heat for two minutes

Pour into a container for small rapeseed, sprinkle a little green onion, ginger, garlic, roasted dried chilies and dried Chinese pepper noodles on top

Add a little oil to the pot and heat it to 90% hot

Just pour in hot oil
Tips:
1. Pixian Douban contains salt, so don't add oil alone;
2. The meat slices should be cut against the grain;
3. The dried chili and dried Chinese pepper must be sautéed slowly over a low fire until the color becomes darker and the aroma comes out.
