Poached Pork Slices

I slice plum meat. I usually use pork plum meat for tenderness. I think the tenderloin is too old after being cooked.

Put it in a bowl, add an appropriate amount of cornstarch, salt, and egg white, mix well, and marinate for 10 minutes

Prepare the right amount of chili and Sichuan pepper. The Guizhou Dahongpao I used looks good in color and tastes not so spicy

Mince ginger and garlic separately

Put the dried Chinese pepper and dried chili in the wok and stir until fragrant brown-red after a low heat, then remove and chop for later use, no need to be too chopped

Tear Chinese cabbage into pieces, wash and drain

Put 2 tablespoons of rapeseed oil in the wok, add the bean paste, minced ginger, and green onions, and fry the red oil

Then add fresh soup or water, pepper, cooking wine, oyster sauce and other seasonings, stir a few times, and mix thoroughly

After the water is boiled, add the Chinese cabbage slices and cook

Spread the boiled cabbage slices out into the container

Then add the marinated meat slices and scatter them, and cook until the meat slices turn white. Do not cook for too long to avoid the texture of the meat slices being too old.

Pour the cooked meat slices into the container, and sprinkle the chopped pepper, pepper, chili powder, pepper powder, and minced garlic on the meat slices

In a separate pot, pour 2 tablespoons of rapeseed oil and heat

Pour hot oil evenly on top of the chili peppers, and a bowl of boiled pork slices filled with pepper fragrant is finished.
Tips:
1. When the prickly ash is dried, just twist it with your hands and break it;
2. Rapeseed oil is the first choice for edible oil, this is the taste of authentic Sichuan cuisine;
3. The last pouring of hot oil is the finishing touch and cannot be omitted;
4. When frying chili and peppercorns, be sure to fry them slowly on a low fire. The fragrant peppers and peppercorns are chopped and sprinkled on the meat slices. It tastes full of fragrant and delicious flavor;
5. The bottom dish can be replaced with bean sprouts, lettuce, lettuce, cabbage, dried tofu, etc. instead of cabbage;
6. It is best to tear the cabbage by hand, which is more delicious.
