Potato Rib Soup

Boil the ribs. Wash the ribs in a pot under cold water and just overwhelm the ribs with water. After the water is boiled, scoop out the foam on the ribs and remove the ribs for later use.

Wash all ingredients. Cut the shallots into chopped green onions and set aside. Cut potatoes and carrots and slice ginger.

Put the potatoes, carrots, ginger slices and blanched ribs into the pressure cooker, add cold water, the water looks a little lower than the ingredients in it and it is almost the same.

Add salt, white wine, soy sauce, and vegetable oil to the pot. When adding soy sauce, you can just add it while mixing it to see the big color. It doesn't look good if you add too much, and even the soup is black if you add too much.

Start simmering on high heat. Turn to medium-low heat and simmer for another 20 minutes after 10-15 minutes. Finally, sprinkle with chopped green onion and chicken essence.
