5.
Add flour little by little, and stir with chopsticks while adding flour until each shredded potato is coated with flour.
6.
Shredded potato wrapped in flour.
7.
Add water to the steamer, put the noodles in the potato yam, and steam for 6 minutes on high heat.
8.
The steamed potato yam is wiped and served to cool.
9.
Mince green onion and garlic; cut red and green pepper into sections.
10.
Put the bottom oil in a wok and sauté the chopped green onion, garlic and chili.
11.
Put in the cool potato rub, and stir-fry the chili noodles over low heat to dry the water.
12.
Stir-fry the potato until it fragrant. Put a little salt, MSG and sprinkle with chives and serve.
Tips:
1 The potato must be rubbed into flakes, or cut into flakes without rubbing it by hand.
2 The amount of noodles is hard to say, just wrap each shredded potato on it.
3 Before frying, wipe the steamed potato and let it cool, otherwise it will stick to the pan.
4 When sautéing the potato yam, sauté slowly on a low heat and dry the water.
5 The authentic potato rubbing should be made with distinct roots and should not be stuck together. The noodles should be mixed just right, each root should be wrapped, and the steaming time should not be too long, otherwise it will lose the taste.
