Potatoes, Onions and Sausage

Wash all the ingredients and cut them into small dices for later use.

Sauté the scallions, ginger, garlic in the wok until the oil.

Pour in the diced sausage and stir-fry half of the diced onion.

Fry the sausage to get the oil, and then pour the diced potatoes into the stir-fry. At this time, turn the heat down and stir-fry the potatoes and sausages for about 15 minutes. The potatoes become slightly transparent and you can taste them until they are cooked.

Pour the remaining diced onion and stir-fry evenly. Add a little water, salt, and sugar.

Add green pepper and stir well.

Add chicken essence, sesame oil, water starch and stir well.
Tips:
1. Sauté the sausage and half of the onion first, add the potatoes and stir fry after the onion's aroma and the sausage's oil are exceeded.
2. Be sure to turn the heat to low and stir fry until the potatoes are cooked. If the heat is too high, it will affect the color of the finished product, making it unsightly.
3. Stir-fry the remaining onions for a while, don’t fry them for a long time, it will taste better if they keep the crispy texture.
