Potatoes with A Salad Knife

After peeling the potatoes, peel them into thin strips with a paring knife, soak them in water to remove the starch
2.
Boil a pot of water, blanch the potato strips until they change color, then remove the cold water, drain the water and set aside
3.
Cut the chili and garlic and set aside
4.
Put oil in the pot, add chili and garlic and saute until fragrant
5.
Then turn off the heat, add the blanched potato chips, add all the seasonings, mix well and serve
