Pretzel
1.
Ingredients: 150g all-purpose flour, 85g water, 90g old noodles
Pastry ingredients: 40g low-gluten flour, 25g pepper oil, 1/2 teaspoon of chicken essence, appropriate amount
Steps: Fill the bowl with flour, shred the old dough, put it into a small bowl, fill with water and yeast, stir and melt, pour it into the flour bowl and form a smooth dough, cover it with plastic wrap and leave it to ferment
2.
When the noodles are fermented, make the puff pastry and minced peppercorns, add oil to the pot, add the peppercorns, and fry on a low heat. Fill a small bowl with low-gluten flour, salt, and chicken essence, then pour the fried fragrant pepper oil and stir evenly to make the puff pastry Put the Sichuan peppercorns in the spare pot and saute the fried peppercorns into a small bowl. Use a rolling pin to press the peppercorns into pieces.
3.
Make it to about twice the size, take it out and knead it, relax the kneaded dough for 10 minutes, then roll it into a large rectangular dough, spread a layer of pastry evenly, and sprinkle with a layer of crushed peppercorns. Fold the right side of the dough to the middle. Come over and fold it on the left side, close the edges, and complete the three-fold
4.
Then turn the dough in half from bottom to top and turn it 90 degrees across, roll the dough into a rectangle again and repeat the steps of 12-15, then complete a three-fold and double-fold to roll the dough into a rectangle, cut into pieces and leave for about 40 minutes, then brush Sprinkle black sesame seeds on the top layer of egg liquid, put it into the preheated oven at 190 degrees, the middle layer, about 20 minutes
Tips:
1. The fried pepper will be more fragrant if it is crushed, or it can be crushed and put together with salt to make salt and pepper, but I personally think that the amount of salt and pepper can be better controlled by separating it!
2. The kneaded dough relaxes and rolls out better.
3. Remember to cover with plastic wrap or damp cloth when fermenting to prevent the surface from drying out and affecting the taste!
