Purple Cabbage Hand Rolled Noodles

Wash and shred the purple cabbage.

Put the purple cabbage in a food processor, add water, and beat for about 2 minutes until no large particles are visible.

Filter, take 130g purple cabbage juice.

Pour flour and purple cabbage juice into the bread bucket. Start the app on the phone, select the dough-making program, select 15 minutes, and start production with one click.

Quickly knead it well.

Take the dough out, knead it with your hands and flatten it, cover it with plastic wrap and let it stand for half an hour. Because the water in the hand-rolled noodles is relatively low, the noodles are harder, so you need to work harder to smooth them.

Knead it a few times again, and it feels that the dough has better ductility.

Roll out the dough, if it shrinks slightly, it is more difficult to roll out, then continue to cover with plastic wrap and let it sit for 15 minutes.

Roll it into a dough sheet about two or three centimeters thick, sprinkle it with flour to prevent adhesion, and fold it in several layers.

Use a knife to cut to the desired width. Slightly loosen the noodles and separate.

I measured it, because my noodles were deliberately rolled into longer and narrow noodles. Each noodle was more than one meter long, and the longest was almost 1.5 meters long.

Tips:
1. It is best to have a juice machine, and the color of purple cabbage is stronger when it is directly juiced.
2. The static time must be enough, otherwise it is difficult to roll the dough sheet and it will shrink.
3. When cutting the noodles, you need to sprinkle more flour, otherwise it is easy to stick, just cut and shake off the excess flour.
