Quinoa and Winter Melon Soup

Winter melon slices

Heat oil in a pot, add winter melon slices and stir fry;

Add water after winter melon is broken;

Add quinoa and cook on medium heat for 20 minutes;

Add salt and pepper to taste (you can sprinkle with chopped green onion for decoration)
