Red Oil Lotus Root

Put chili powder, sesame seeds, and a teaspoon of salt in a bowl

Heat the oil in the pot, turn off the heat and wait for 15 seconds, then pour the oil into the chili powder

Cut the lotus root into about 2mm slices

Soak it in clean water to remove the starch in the lotus root

Boil water in a pot, add lotus root slices and blanch until cooked
6.
Soak the blanched lotus root in cold boiled water and drain the water
7.
Peanuts are roasted and then peeled and pounded into peanuts
8.
Mix the ground peanuts, salt, sugar, vinegar, and appropriate amount of chili oil.
Tips:
1. The oil must be cooked, but the chili powder should not be poured in immediately, otherwise it will be mushy.
2. Frozen some ice cubes in advance, put the blanched lotus root slices in ice water, it will taste more refreshing in summer.
