Roasted Eggplant

1. Prepare ingredients, chop lean meat finely, into minced meat

2. Break the green pepper into small pieces, blanch it in the pot until it changes color, and remove it

3. Cut the eggplant into a hob shape, add a little water and stir it, it will not eat too much oil when it is fried in the pan

4. Pour the right amount of oil into the pot, fry the eggplant softly and remove it

5. Saute garlic and shallots, add minced meat and stir fry

6. Add a spoonful of bean paste, add a little salt, appropriate amount of oyster sauce and light soy sauce, stir fry, pour in boiling water, and bring to a boil

7. Pour the eggplant, cover the pot and cook for a while

8. Pour in the green peppers, stir fry the green onions for a while and it will be out of the pot
