The specialty dried apricots mailed by my good friend thousands of miles away, I just thought about what kind of dishes I could do. If I had pork knuckles at home, I would have roasted pork knuckles. I guess roasted chicken wings would also be delicious.

Roasted Pork Knuckles with Dried Apricot

1. Put a little pepper and cooking wine in a pot under cold water for pigs' hands, blanch off blood, impurities, and fishy; clean dried apricots for later use

2. Pour oil in the pot and heat up, add pork knuckles and fry until the surface is golden

3. Put a few slices of ginger and sugar

4. Pour in a little dark soy sauce and stir-fry evenly

5. Pour in boiling water that has not been used for pork knuckles, and add dried apricots

6. Simmer on low heat until the pork knuckles are soft and rotten, season with salt

7. Just collect the soup
