Roasted Trotters

Cut the trotters in half, then boil in water. Put the ginger, cinnamon, star anise, and bay leaves into a pot and stir fry until it is fragrant. Add water, soy sauce, rock sugar, monosodium glutamate, salt, and trotters. Bring to a boil on high heat, and after simmering on low heat for an hour, change to high heat to collect the juice.

Take out the marinated trotters, add cumin, salt and pepper.

Put the trotters in the oven, adjust the temperature to 220 degrees, and bake for 15 minutes.
