Royal Chicken Wings

Prepare the ingredients you need, pull out the remaining fine hairs from the chicken wings, carefully clean them, and scald them with hot water to remove the peculiar smell.

From the back of the chicken wings, make two cuts with a knife to make the chicken wings more delicious. You don't need to swipe too much, just 2 knives, otherwise it will affect the appearance of the finished product.

The chicken wings are placed in a basin, and Guizhou National Temple Taoist Youth Gold Wine is added in an appropriate amount, not too much. I usually add about half a spoon for the meal spoon I usually use. Add green onions, ginger slices, 1 spoon of salt, 1 teaspoon of pepper, mix well, and marinate for 20 minutes until the chicken wings are delicious.

Heat a non-stick pan without adding oil. After the pan is heated, put the marinated chicken wings in the pan with the surface facing down, and fry on low heat until golden on both sides. Chicken wings are really soft and smooth because of the high fat content. If you cook them directly without oil, you can force out the fat in the chicken wings and reduce heat absorption.

After the chicken wings are fried, add some hot water, and then add the sliced ginger and green onions that were just marinated in the chicken wings. Remember it's hot water, don't add cold water, the chicken wings will shrink suddenly when cold, and the taste will become hard.

Then add five or six drops of white wine, 2 spoons of light soy sauce, 1 spoon of dark soy sauce, and add about 25 grams of rock sugar. The addition of rock sugar will make the color of the chicken wings more beautiful. Don't worry, after all, it will evaporate with the steam, leaving only the fragrance, and it will not cause drunk driving.

Cover the lid, bring to a boil on high heat, turn to medium and low heat, and simmer for about 15 minutes until the chicken wings are soft and rotten. Use chopsticks to pierce them and the chicken wings will be soft.
