Rye Bread

Weigh all the ingredients, except for olive oil, walnuts, and dried cranberries, pour them into the bread machine.

Choose the dough working stall and mix the dough for 20 minutes.

Pour in olive oil and continue to knead the dough until the dough can pull out the ribs, not very transparent.

Knead in the chopped walnuts and cranberries by hand for basic fermentation.

In the first fermentation, the dough is twice as large as the original, and the dough is gently squeezed to remove air bubbles.

Take out the dough, divide it into two parts, round it, and leave it for 15 minutes.

Gently press the dough into an oval shape. (Do not roll out all the bubbles in the dough)

From top to bottom, tuck the two sides slightly inward and roll them into an olive shape with pointed ends.

Put the shaped dough into the baking tray and ferment for 30 minutes until the volume is about 1.2 times larger.

Sprinkle low-gluten flour on the surface after fermentation.

Use a sharp knife to make a few cuts on the surface of the dough.

Preheat the oven to 220 degrees, and bake with steam for 25 minutes until it shows a beautiful baking color.
