Saliva Chicken

Remove the head, claws, wing tips, and buttocks of the chicken. Wash and take half of the chicken. Prepare the accessories.

Put the chicken in a pot under cold water, add a spoonful of salt to the pot, put ginger, green onions, and cooking wine. After it is boiled, simmer for 15 minutes on low heat, and the chopsticks can easily insert the chicken.

At the same time, stir the dried chili and rattan chili into a pot to give a fragrance, remove and mash into chili noodles for later use. The fried peanuts are crushed on a cutting board with a knife.

Pour in ice water and remove it to drain.

Add oil to the pot until it is 70% hot and slightly smoke.

Hot oil is poured on the surface of the chili to make red oil.

Add garlic rice, ginger rice, light soy sauce, salt, sugar, vinegar, sesame oil to the red oil, and add a few tablespoons of water to cook the chicken to adjust the sauce.

Tips:
1. When cooking chicken, the fire must be low, and it should not be cooked for too long, otherwise the meat will be peeled off;
2. If the ice water step is omitted, the chicken skin won't be crispy, and the taste will be a little bit worse;
3. If you like spicy food, you can add more chili noodles and pepper noodles at will.
