Sauce Big Bone

Wash the bought big pig bones (generally the business will help you chop them into large pieces), soak in clean water for at least 4 hours, change the water 2 to 3 times in between, until the water is clear;

In another pot, change the water, add the ingredients, green onion, ginger, soy sauce, sweet noodle sauce, sesame sauce and salt, boil on high heat, and remove the foam

Lower the rinsed big stick bone;

Add cooking wine, turn to low heat after high heat, cover the pot, and simmer slowly for 1 to 2 hours until the flesh is crisp.
Tips:
1. Buy the kind with big bones and more meat. Of course, even if you like to chew your bones, you can also buy less meat, the price is cheaper;
2. Prepare the seasoning package by yourself. There are also sauce packs on the market. I always feel that the flavor is too strong and I never use it. The principle of self-matching is to suit your own taste, use whatever you like, and the purpose of removing the fishy taste is achieved. The specifics are not important. But star anise, aniseed and cinnamon must be present;
3. Of course, soy sauce and sweet noodle sauce are indispensable as seasonings. Soy sauce is also available. My trick is to add a small spoonful of sesame paste, not too much, just 1 small spoonful, it is very fragrant-this is not a secret;
4. Don't cook for too long as the meat is rotten away from the bone. Today's pork is very tender, and it takes about 1 hour. Too much stewing time will destroy the nutrition.
