Sauerkraut White Meat

Put water in a pot and bring to a boil, put the pork belly and blanch for 10 minutes, take out and cut into slices (you can also buy ready-made pork belly slices), rinse the sauerkraut with water, and soak the noodles for later use.

Put a little oil in the pot, sauté the star anise on medium and small heat, then add the green onion, ginger, garlic and stir-fry for the fragrance.

Put the sauerkraut in and stir-fry evenly, and bring to a boil after smelling the aroma.

After the sauerkraut soup in the pot is boiled, change to medium heat, put the sliced pork belly slices into the pot one by one, so that the soup is covered with the meat slices, and simmer on low heat for 30-45 minutes after boiling again (the time depends on the amount of ingredients ).

After simmering, add the vermicelli and simmer for 5-10 minutes, until the vermicelli is cooked through but not smashed. Season with salt and cook. You can just eat it like this, and some people like to use garlic and add a little light soy sauce to make a sauce for dipping.
