Sauteed Octopus

Wash the octopus, prepare a pot of clean water, boil the processed octopus, and remove it after 1-2 minutes in the water.

Put the octopus in a large bowl, add 2 tablespoons of oyster sauce, 2 tablespoons of light soy sauce, half a tablespoon of braised soy sauce, and 1 tablespoon of fine sugar.

Mix well and marinate for at least 15 minutes.

Prepare the ingredients, cut the shallots into small pieces, shredded ginger, minced garlic, and cut a little green pepper into small pieces. If you have carrots, you can also prepare some shredded carrots.

Heat oil in the pot, add shredded ginger and minced garlic until fragrant.

Add the shallots, green peppers, and carrot shreds, stir-fry evenly over high heat.

Then pour in 2 spoons of XO sauce, make your own spare, or buy the finished product, if you don’t have it, you can ignore it.

Stir fry over high heat, sauté the onions and green peppers until soft.

Finally, add octopus and stir fry. If the color is too light, you can also add soy sauce.
Tips:
1. If you are sensitive to the taste of seafood, add some cooking wine to the water when you blanch it.
2. The final stir-fry is not easy for too long, and the fry is too old to affect the taste.
