Scallion Egg Pancake

Wash the green onions first

Knock the eggs into the bowl

Stir evenly with chopsticks or a blender

Finely chop the shallots

Put the shallots in the egg mixture

Add an appropriate amount of flour and stir

Add sugar, salt and pepper, stir well, let stand for 10 minutes

Turn over one side and fry the other side until golden brown on both sides
