Scallion Noodles

Wash the shallots and separate the white and green onions.

Cut the green onion into sections, and chop the white onion into small pieces.

Add salad oil to the wok, add the green onion for about 5-6 minutes, stir up the aroma, remove and discard.

Add scallion and fry it slightly, turn off the scallion oil and fry it.

Shell the boiled eggs and cut them in half, shred the cucumber, and fry them with a small ham cutter.

Add a spoonful of light soy sauce, half a spoonful of dark soy sauce, a pinch of salt, and a spoonful of oil to the bowl.

Bring water to a boil in a boiling pot, add the noodles, and pick them up when they are cooked.

Add the cooked noodles and mix well. If it is too dry, you can add a little boiled noodle soup.

Put eggs, cucumber, and ham at the end.
