Scallion Noodles

We can’t buy Chinese noodles when we study in Russia. We bought Korean noodles. Korean noodles are more resistant to cooking than Chinese noodles. Chinese noodles are cooked for 10 minutes, and Korean noodles are cooked for 15 minutes.

First cut some green onion and save it for making scallion oil. Then cut some green onion and millet pepper and save it for noodles.

I forgot to follow the picture of the fried peanuts. I put some sugar in the fried peanuts and I want to use it in the noodles.

I used the leftover oil from the fried peanuts and added some new oil. The oil is warmed to 80%. Put in the onions, turn the heat to low for 1-2 minutes, then you can remove the scallions after frying.

Around this time, the noodles have been cooked for 15 minutes. Take out the noodles twice and put them in cold water.

Take out the noodles for one person and put the right amount of soy sauce chicken essence, peanuts, scallion oil, and diced chili and chopped green onion in the noodles and stir evenly
Tips:
When frying scallion oil, you must pay attention to the heat. Do not fry the scallion segments and they will become bitter. The ingredients I use are basically foreign ingredients. I believe it will be better if you use domestic seasonings.
