Scallion Noodles
1.
First of all, prepare the ingredients first~ the green onions, as long as the green onion leaves, the light soy sauce and the oyster sauce, are placed in a small bowl for later use.
2.
This time I used the noodles made by the noodle maker. It's not an advertisement. I really think the noodle machine is simple and convenient to come out quickly~
3.
Put edible oil in the pot, put the shallots before heating, heat up on low heat, and stir-fry with a spatula until the color becomes darker, the burnt fragrant and crispy, remove.
4.
In the scallion oil, pour the prepared small bowl of sauce ~ when the sauce appears big bubbles, add sugar, stir with a spatula until the sugar melts, turn off the heat and set aside.
5.
Put a little salt and a few drops of oil in a pot of clean water, and bring to a boil. After the water is boiled, add the noodles and cook. Adding oil can effectively prevent noodles from sticking
6.
Cool the cooked noodles and remove them from the water. Put the scallion oil in a pot and mix well, or directly pour it into the pan of fried scallion oil and mix well
7.
Put the noodles on the finished plate, garnish with fried green onions ~ delicious scallion oil noodles are ready~ salty and sweet, the scallion oil is fragrant but not greasy.
8.
If you do a lot at one time, you can also put the onion shreds fried in the scallion sauce into an airtight bottle and refrigerate it, like me, and you can use it directly next time~
Tips:
This is really a quick dinner. It can be used for half a month if you fry the scallion oil once, and the noodle machine can be used for about a week to press the noodles once~ a week, you don’t have to worry about lunch anymore! Haha~
