Tips:
1. Boil the scallion oil. In addition to the chives, you can also add flavors, star anise and other seasonings, so that the scallion oil will have a more mellow taste, which is more fragrant and less burdensome than the simmered scallion.
2. Make the sauce for scallion oil noodles, soy sauce, dark soy sauce, sugar, these 3 kinds of seasonings are indispensable, none of them tastes bad, and their ratio should be mastered, 2:2 :1 is the best.
3. Light soy sauce and dark soy sauce have a salty taste, and the boiled scallion oil is also salted, so there is no need to add salt.
4. After the noodles are boiled, stir in cold water once, remove them and pass the cold water again, the taste will be smoother and more smooth.
