Very delicious scallion pancakes, even more refreshing to eat.

Scallion Pancakes

1. While stirring the flour with chopsticks, pour it into boiling water;

2. Add a little cooking oil to the dough, dip it in cold water to form a smooth dough, cover it with plastic wrap and let it rest for 30 minutes;

3. Divide the dough into 4 equal parts and roll each part into round slices;

4. Chop the chives, add a little salt and a little cooking oil, mix thoroughly, and sprinkle on the noodles;

5. Divide the dough into 9 square grids and fold it layer by layer as shown in the picture;

6. The folded dough is shown in the picture;

7. Roll out from the middle to all sides;

8. Add a little oil to the pan and fry on both sides over medium and low heat until browned.
