Scallion Potato Chips

Material preparation.

Cut the shallots into 4 halves with two knives, and then cut into small pieces.

After the potatoes are sliced, rinse them with water to remove any spilled starch.

Put potatoes and shallots on a plate and set aside.

Prepare green onion, ginger and garlic.

Heat oil and pour into potato chips, stir fry, and pour out to serve when they are ripe. Put a little oil on the onion, ginger and garlic, sauté fragrant, pour in the potato chips, then add the onion and stir fry.

Tips:
1. After the potato slices are cut, they must be watered twice, otherwise they will stick to the pan and stick to each other.
2. When frying potato chips, use more oil, and stir as little as possible when the pan is not sticky to avoid breakage.
