This time I used the essence of scallops and fried them with eggs. This dish is very popular with my family! The soft, tender, fragrant and golden-colored dish is very good even as a treat for banquets.

Scrambled Eggs with Scallops

1. After the fresh scallops are taken out of the meat, keep the bedding part. The rest of the part can be used for soup or fry. The bedding part should be mixed with a small amount of light soy sauce to add more flavor. Beat 3 eggs into a bowl;

2. Add a small amount of salt according to your taste, then use chopsticks to beat the eggs evenly to let the salt dissolve;

3. Put an appropriate amount of blended oil in the wok;

4. Put the scallop diced in the pot after the oil is hot;

5. Stir fry a few times;

6. Pour the beaten egg liquid into the pot in a circle;

7. Pour evenly;

8. Flip the ingredients with a spatula, and scramble the egg liquid and bedding into egg cubes;

9. Put the scrambled eggs on the plate and add some chopped green onions;

Tips:

1. Bedding should be marinated with light soy sauce to make it more delicious;

2. Do not fire too fast, the amount of condiments should be adjusted according to your own taste.
