Secret Soy Sauce Chicken (soy Sauce Chicken)

One chicken, empty its belly and wash it

Prepare coriander and green onions, wash directly and bundle them into small bundles without chopping them

Shajiang (some places seem to call this Jerusalem artichoke), and garlic

Sha ginger and garlic are patted and cut into granules

Add soy sauce, salt, sugar and sesame oil to the ginger and garlic seeds, mix well

Stuff the condiments made in the previous step, the coriander and the spring onions, into the chicken belly. (Don't put it all down, leave some seasonings)

Heat the oil in the pan and fry the chicken on both sides of the pan until golden brown (this step is too troublesome, but the fried chicken will be more fragrant and tighter)

Put the fried chicken in a pressure cooker, pour the remaining seasonings, green onions, and coriander in the previous step, add the dark soy sauce, a part of salt and sugar, and add a small amount of water (the pressure in the pressure cooker evaporates less so you don’t need to add too much More water). If you don’t have a pressure cooker, you can also cook it directly in the wok.

Put the chicken stewed in the pressure cooker into the pot and then collect the juice. At this time, you can try how to season it properly. This step can also be omitted, because the chicken that has been pressed by the pressure cooker is already cooked

Tips:
I always say that using white sugar is not healthy, so I changed it to rock candy. Friends who have rock candy at home can use rock candy to make it. I use a pressure cooker because I like to cook something bad, and if I don’t like it, I can use a wok to simmer it directly. The amount of seasoning is up to everyone to weigh it, but sand ginger (Jerusalem artichoke) and garlic (garlic) must be more fragrant~
