Sesame and Salty Flatbread

Prepare salt, oil, yeast powder, flour for pastry, thirteen spices, white sesame seeds, shallots, wash and cut into green onions, add 4 grams of salt to 500 grams of flour and mix well

Mix the yeast powder with 150 grams of warm water until it melts, then pour it into the flour and mix well, then pour in 200 grams of water and mix well. This amount of water can’t be kneaded with the flour by hand, just use chopsticks to stir evenly.

After that, wrapped in plastic wrap and fermented to twice the size. I used the fermentation process in the oven and took 1 hour at 37 degrees

When fermenting, we have to make shortbread first, pour the thirteen incense and the remaining salt into the flour and mix well. Pour the oil into the pot and burn it. After smoking, wait for 30 seconds and then pour it into the flour and mix well. Shortbread, too high oil temperature will produce a burnt smell, so don’t pour it in immediately

Sprinkle more dry flour on the chopping board, take out the fermented dough and divide it into 2 portions for easy operation. Push the dough away by hand and then roll out the rectangular noodles with a rolling pin, brush the pastry evenly, and chop the green onion. Evenly add

Then roll up and cut into even dough with a knife. 500 grams of flour can make 14 cakes of this size.

Pinch the two ends of the dough tightly and close it in the middle, as shown in the picture, cover it with plastic wrap and let it stand for 15 minutes.

Then glue the dough with white sesame seeds, roll it out into a rectangular shape, and put it in a baking tray

After preheating the oven at 200 degrees, put the baking pan in the middle layer and bake for 20 minutes, and move the baking pan to the upper layer for the last 5 minutes to color.

Tips:
The temperature of the oven should be set according to your own oven. If there is no oven, you can add a little oil to a pan and bake until golden on both sides.
