Sesame Syrup
1.
Ingredients: 160 grams of cooked white sesame seeds, 32 grams of caster sugar, 50 grams of maltose, 40 grams of water, 0.6 grams of salt. Accessories: 30 grams of starch, 30 grams of water, 10 grams of corn oil
2.
Put the sesame seeds in the oven, heat up and down at 100 degrees, keep warm and set aside. Pour 30 grams of water into the starch, make a uniform paste, and set aside. Pour the caster sugar, maltose, water, and salt into the pot in turn
3.
Heat on a medium-to-small fire. When the sugar dissolves, continue to heat to 110 degrees and remove from the fire. Cool to about 85 degrees, pour in the starch paste, and stir quickly evenly. Put back on the heat, heat and stir until transparent. Pour in corn oil and mix well
4.
Continue to heat to 118 degrees, thick. Pour in half of the sesame seeds and mix well quickly
5.
Pour it on a non-stick cloth and fold it repeatedly. Knead in the other half of the sesame seeds while hot. Shape it into a rectangle and cut into small pieces
6.
Put it in sesame seeds, round into a cylindrical shape, wrap glutinous rice paper and sugar paper in turn, seal and store
Tips:
After pouring the sesame seeds, stir evenly quickly to prevent the sugar liquid from cooling and solidifying and making it difficult to stir in the sesame seeds.
The made candies must be sealed and stored to prevent moisture.
