Shaanxi Liangpi
1.
This is a rice bowl and two small bowls of flour, enough for three people.
2.
Add cold boiled flour and noodle water, and use chopsticks to pick up and draw silk as the standard.
3.
This kind of gongs for steaming noodles are sold on Taobao for more than a dozen yuan. The size must be smaller than the mouth of your steamer, otherwise you can't put it in!
4.
Put oil in the gong and add surface water. Don't add too much to steam and it will be thick. Adding surface water just covers the whole gong by itself!
5.
Boil water in the pot, put the gong with the water on the water directly, for three to five minutes (the time depends on the size of your dough), the dough will be formed!
6.
Turn off the fire, prepare a large basin of cold water, and put the gong and dough in the cold water to cool!
7.
Let it cool for a few minutes, peel off the cold skin with your hands, it looks like this!
8.
Cut it into the usual thickness that we eat outside, add shredded cucumber, chopped green onion, garlic mash, spicy oil, salt, very fresh, vinegar, and sesame oil!
9.
Then you can enjoy it!
10.
Boil a meatball soup, add some lettuce, and salt. Pairing with Liangpi is simply a must!
Tips:
1. Be sure to pour a little bit of water when making facial water, if you get too much at a time, the facial water is easy to get lumps! 2. After steaming, be sure to turn off the heat before taking it out to cool down. If the water is too boiling, it will easily splash the water into the gong, which can also prevent scalding! 3. The garlic paste can be sprinkled with chili oil, it is very fragrant.
