Shredded Potato

Peel the potatoes and wash them.

Use a wire grater to wipe into thin filaments.

Wash the potato shreds with water 3 times to remove the starch on the surface of the potato shreds.

Cut the dried eggs into thin strips.

Cut the leek into sections.
6.
Boil shredded potatoes in boiling water for 2 minutes to remove and drain.
7.
Blanch the leeks in boiling water for 1 minute to remove and drain.
8.
Put potato shreds, dried eggs, and leeks in a basin, add all the seasonings, and mix well.
9.
A simple and delicious cold side dish is ready.
