Shredded Potato Burrito

Just one potato for two

Shred potatoes and rinse with water a few times. New potatoes have more starch.

If you have time, the water used to run the potato shreds can be made into starch by itself and dried.

There are no chili in the house, so shred the shallots. Mince garlic.

Pan to oil, fry fragrant pepper and dried chili.

Stir-fry shredded potatoes and add salt.
