Shredded Potatoes with Hot Peppers

1. Shred potatoes and wash off the starch with water.

2. Shred the sharp pepper, shred the chives, and cut the dried red pepper into small pieces.

3. Put an appropriate amount of water in the pot and bring to a boil, add the potato shreds and boil for two minutes.

4. Remove it and put it in cold water for several times to cool the potato shreds quickly.

5. Put the potato shreds into the basin under water control, add the shredded peppers and green onions.

6. Add three spoons of white vinegar, one spoon of light soy sauce, one spoon of red oil, some salt, and some sugar.

7. Put an appropriate amount of vegetable oil in the pot, heat until it smokes and turn off the fire, add a few peppers and sauté until fragrant.

8. Do not remove the pepper, add dried chili.
