Soft Fried Tenderloin

Prepare all the ingredients.

Wash the pork tenderloin and cut into thick strips.

Put pork tenderloin in a bowl, add ginger, pepper, salt, thirteen spice powder, light soy sauce, and finally pour in appropriate amount of cooking wine and sesame oil. Grab it and let it stand for 10 minutes.

Open the egg, take out the egg white and put it in a bowl, add a little salad oil and mix well, then add an appropriate amount of starch, stir evenly to make a soft fried paste.

Spread the pork tenderloin and fry it until soft.

Add oil to the pot and cook for 40% heat, then put the meat sticks in hot oil and fry them until they are cooked through. When it is golden brown, remove and drain the oil and serve on a plate.

Tips:
1. Before processing the pork tenderloin, tap it with a mallet to make the meat more tender.
2. The temperature of the fried tenderloin must be controlled at medium heat, so that the fried tenderloin will be crispy on the outside and tender on the inside.
