Sour and Spicy Duck Gizzards

Prepare wild pepper, spicy millet, garlic moss, minced ginger, and minced garlic.

Wash the duck gizzards and change them into a flower knife, slice them, and put them in a pot.

Add starch or flour and white wine and rub vigorously to clean it.

Boil the water in the pot, pour the duck gizzards and scald them until they change color and remove them.

Heat the pan with oil, add the minced ginger garlic, wild mountain pepper, and millet to fragrant.

Add oyster sauce, light soy sauce, pepper, salt, and garlic moss. Stir-fry until it's ripe, add duck gizzards.

Finally, add the dark soy sauce to color, drizzle with sesame oil, and stir fry out of the pan.
