Different from the traditions of North India, South India has more diverse and modern dishes due to colonial, trade, religious and other reasons. Among them, South Indian cooking can be divided into four major regions: Andhra Pradesh, Tamil Nadu, Karnataka and Kerala. Dishes in different regions have their own different styles. Today this dish is in the Andhra Pradesh style and is considered to be the hottest curry variety in South India. This dish uses the acidity of raw mangoes to neutralize the spiciness, creating a refreshing and appetizing hot and sour taste.

2. Put dehydrated coriander, garam masala, red chili powder and turmeric powder on a plate.

3. Cardamom, bay leaf, cloves and cinnamon are placed on another plate.
