Today, this "sauce-grilled eggplant" is the most popular recipe in my house. If I have this dish, I usually cook more rice. This time I added pork belly and soybean paste to help, so that the aroma of the gravy penetrates into the eggplant, and the rich aroma of soybean paste melts into the eggplant, which is full of flavor and more fragrant. Although the taste of this soy sauce eggplant may be different from that of oiled eggplant, it is delicious with the same meal. It is definitely the home-cooked dish that must be served every time you eat. More importantly, it is healthier with less oil and no burden. "

Soy Sauce Eggplant

1. Prepare raw materials;

2. Put the sliced eggplant on the hob in the microwave for two minutes;

3. Heat the pan with cold oil, add the pork belly and stir fry;

4. When the fat is out and the surface of the pork belly is slightly yellowed, add sliced ginger and rock sugar and continue to fry;

5. Add appropriate amount of cooking wine and cook, continue to stir fry;

6. Pour in soybean paste and continue to stir fry;

7. Add appropriate amount of water, cover and simmer for five minutes;

8. Add the eggplant that has been beaten in the microwave, and continue to simmer for a minute or two until the eggplant is 80% cooked

9. Collect the juice over high heat, pour in the green peppers and an appropriate amount of salt, mix well and put it in a small bowl, sprinkle the surface with chopped green onions.

10. Serve it.

Tips:

1. The pork belly must be stir-fried slightly, so that the eggplant will not only taste fragrant, but also not greasy; 2. Use cooking wine to cook the pork belly to remove the fishy taste, and then add the soybean paste to stir fry to make the sauce. The taste is more fragrant and stronger; 3. The eggplant is microwaved in advance. The pork belly should be simmered for five minutes, then add the eggplant and cook until it is eighty mature. Then you can harvest the juice on high heat. Finally add salt to taste, add the green pepper and stir evenly. That's it.
