Spiced Brine

Prepare star anise, tangerine peel, bay leaves, seedlings, and cinnamon, wash and set aside

Add three bowls of water and simmer in a pot on low heat for half an hour
3.
Add sugar, dark soy sauce, oyster sauce, salt and cook for 5-10 minutes
4.
After cooking, filter with a sieve to remove the residue and it will become a spiced brine
