Spiced Fried Eggplant

Prepare two large purple eggplants; PS: Choose a large and tender eggplant.

Wash the eggplant, cut into thick slices, and soak in water for 3 minutes;

Remove and drain the water, add a little salt and mix well;
4.
Mix fried powder, salt, five-spice powder, and water to form a paste;
5.
Add sliced eggplant and wrap it evenly on top of the lake;

Heat the pan, pour the oil, the oil temperature is about 200 degrees, and put in slices;
7.
Turn the yellowish over the other side, continue to fry the yellowish to remove it, and blot the excess oil with absorbent paper.
Tips:
1. Choose large slices of eggplant;
2. Soak the eggplant in water to remove the black color;
3. The oil temperature should reach about 200 degrees to fry before it is crispy on the outside and tender on the inside;
4. The amount of oil depends on the size of the pot.
