Spiced Quail Eggs

Wash quail eggs. Put an appropriate amount of water in a small pot and add a spoonful of salt.

Bring the water to a boil on high heat and simmer for 5 minutes on medium heat.

Take out the boiled quail eggs, let them cool, and tap the quail eggs one by one with a spoon until the shell breaks.

Add 2 star anise, 5 Chinese pepper, appropriate amount of cumin, appropriate amount of bay leaves, 1 piece of grass fruit, and a little cinnamon, add appropriate amount of water, and cook for 10 minutes. If the material is not enough, use five-spice powder and water and stir evenly.

Pour in 1 spoon of dark soy sauce, 2 spoons of light soy sauce, and half a spoon of sugar.

Pour the quail eggs. Boil for five minutes and add some salt. After turning off the heat, eat it more than 2 hours later, preferably overnight.

If there is no aniseed in the house, five-spice powder can be used instead, but the taste is slightly inferior.

How to tell if quail eggs are fresh:
When washing quail eggs, you can put all the quail eggs in a small basin with water. If you find any floating, don't cook it again, which means it is not fresh.
