Spicy Chicken Noodles
1.
After the chicken breast is cleaned, add salt, spring onion, star anise, and pepper to cook for 20 minutes.
2.
Remove the cooked chicken and let it cool and tear it into silk.
3.
Prepare chopped peanuts and sesame seeds. Put the peanuts in the oven at 180 degrees and bake for 7-8 minutes, then remove the skins and put them in a fresh-keeping bag to crush them with a rolling pin. Roast the sesame seeds at 180 degrees for about 5 minutes and then place them on the chopping pin and crush them with a rolling pin. The peanuts and sesame seeds can be sealed and preserved at one time, and it is convenient to use them directly next time.
4.
Steam the fresh noodles in the pot for 15 minutes.
5.
Take out the steamed noodles and let cool and add 2 tablespoons of vegetable oil. Boil the noodles in boiling water for 1 minute before eating. The noodles processed in this way have a stronger texture.
6.
Add 2 tablespoons of sesame oil, 2 tablespoons of light soy sauce, 1 tablespoon of mature vinegar, 1 tablespoon of salt to the sesame paste, and stir evenly.
7.
Clean the chives and coriander and chop them.
8.
When the noodles are cooked, put them in a bowl, add crushed peanuts, sesame seeds, topped with sesame paste, top with chili oil, sprinkle with chives and coriander.
