Spicy Chicken Pot with Fresh Soup

Wash the chicken legs and put it in a pot, add 2 large bowls of water, add 5 grams of green onion, 5 grams of ginger, 10 grains of wolfberry, and 2 jujubes

After the high heat is boiled, change it to a low heat and cook for 1 hour and use it as a soup base

Wash the chicken breast and cut into pieces about 1.5 cm square, marinate it with half a teaspoon of cooking wine, half a spoon of soy sauce, and 2 tablespoons of water starch; pour oil into the wok and heat, add 5 grams of chopped green onion, 5 grams of ground ginger, 6 1 gram garlic slices, 20 peppercorns, 5 dried red peppers cut into oblique sections and saute until fragrant

Add 1 tablespoon of Pixian Doubanjiang, and stir-fry for about 2 minutes on low heat, until the red oil is produced in the Doubanjiang (I personally think that Pixian Doubanjiang must be fried for a while); pour in half a spoon of light soy sauce and half a spoon Soy sauce, half a teaspoon of cooking wine, 1 teaspoon of sugar, continue to stir well

Put the chicken pieces and stir-fry over low heat for about 1 minute, until the chicken tastes

Pour the chicken broth and bring it to a boil, then you can use it to shabu-shabu (I didn’t add salt to the soup base, because the sauce should be dipped in the final shabu-shabu. Adjust this according to your personal taste. If the taste is heavy, you can pour it. Add a little salt to the soup base)

Put 2 teaspoons of salt in the sesame paste, then put in cold water to melt the sesame paste (the cold water should be added a little bit, and add the sesame paste and water each time after the sesame paste is completely fused with the water. If you add too much water at a time, it will cause oily water. The phenomenon of separation, the sesame sauce will become watery and not sticky)

After the sesame sauce has melted, add the fermented bean curd and stir well, then add the leek flowers and stir well, add the sugar and chicken essence and stir well

Finally, add green onion, ginger, and minced garlic and stir well.
