Spicy Eggplant

Prepare the ingredients and wash the eggplant

Cut the eggplant into strips and soak in light salt water to prevent oxidation and blackening

Mince garlic, wash and cut parsley
4.
Heat the pan with cold oil and add the minced garlic until fragrant
5.
Add eggplant strips and stir fry
6.
Add two tablespoons of spicy shiitake mushroom sauce, add two tablespoons of light soy sauce, stir fry evenly, add two tablespoons of water, cover and simmer

Add sugar and salt to taste

Stir in coriander and stir well
