Spicy Hot Pot

Except for the ham (or pork belly), boil the ingredients in boiling water in turn. Pay attention to the heat. The crispy ingredients can be boiled for a while. Don't boil them soft.

Fry the ham or pork belly in oil and serve.

To make spiced oil, I think this is the key to the fragrant hot pot: first put the oil in the pot, put the pepper, dried chili, aniseed, bay leaves, grass fruits, cardamom, cloves, and cumin into the pot;

Heat on low heat until the spices are fried to brownish yellow, then remove the spices and leave the oil; put the dried chilies in the five-spice oil, fry them until fragrant, and slowly fry them on a low fire. Once the oil turns red and the aroma comes out, remove them immediately and drain. The dry oil is ready for use.

Add the hot pot base and Pixian bean paste to the five-spice oil, and stir-fry the red oil and flavor.

Then add green pepper, ginger and garlic slices, and continue to fry until fragrant.

Put the ingredients in order, put the hard-to-cook or hard-tasting first, and then put the well-cooked easy-tasting, stir-fry evenly, then add the cooking wine, and put the dried chilies that have been fried in advance into the fry together. Then add sugar, salt and chicken essence to taste and stir well;

Sprinkle with sesame and coriander in a large bowl. (Because the sesame seeds I use are raw sesame seeds, so I sprinkle sesame seeds before going abroad, and sprinkle coriander after cooking)

Tips:
The ingredients inside can be added according to your tastes, vegetarian friends can also choose vegan ingredients, and those who love meat can add some meat slices, but the ingredients are best not to be too mixed.
note:
1. Stir the oil of the spice, put more, can more fully integrate the flavor of various ingredients together. And the spicy hot pot is definitely not delicious if there is less oil.
2. Most of the ingredients in the spicy pot need to be processed in advance, blanched in water or deep-fried, which is convenient for quick stir-frying. The processed ingredients should be drained, otherwise the spicy pot will have water, which will affect the taste.
3. Be sure to stir the spices over a low heat, otherwise it will taste bitter.
