Spicy Tofu with Minced Pork

Wash the old tofu, cut into small pieces, and soak in clean water.

Choose minced pork with about 30% fat.

The ginger slices are loosened with a knife and processed ingredients, and the code plate is set aside in the side dish.

Drizzle pepper oil in the pot, add ginger slices and minced meat. (The cooking oil does not need to be heated. In traditional cooking, the cooking oil must be heated to 70%, because the cooking oil has the fishy smell of raw fat.)

At low oil temperature, use a spatula to scatter the minced meat to make it into rice grains.

After the minced meat is dispersed, add an appropriate amount of bean curd sauce and stir fry.

Stir out the red oil and minced meat with low heat until it is firm and spicy.

When the minced meat is firm and spicy, add some soy sauce and stir fry for color.

After the minced meat is stir-fried for color, add the processed old tofu.

After the tofu is in the pot, use a spatula to gently turn and fry to make the tofu evenly colored.

After the tofu is colored, add enough water.

Cover the pot and bring it to a boil over high heat, then turn to a simmer and simmer for seven to eight minutes.

When the texture of the old tofu has burnt out the micropores, add an appropriate amount of white sugar and stir fry to taste and thicken, then it can be served on a plate.
