Tips:
1. Spinach contains an oxalic acid substance, which not only makes it astringent to eat, but also combines with calcium in food to form insoluble calcium oxalate. Calcium oxalate cannot be absorbed by the human body, but it is easy to deposit on the blood vessel wall. Vascular dysfunction. When eating spinach, it is advisable to blanch the spinach, remove it and soak it in cold water for 10 minutes, and the calcium oxalate will sink in the water.
2. Contraindications
(1) Spinach cannot be eaten with cucumber: Cucumber contains vitamin C decomposition enzyme, while spinach is rich in vitamin C, so the two should not be eaten at the same time.
(2) Spinach should not be eaten with foods with high calcium content such as milk.
(3) Spinach cannot be eaten with tofu: because spinach contains a lot of oxalic acid, while tofu contains calcium ions, once spinach and the calcium in tofu combine, it will cause stones and affect calcium absorption. If you must eat it, you can blanch the spinach first to get rid of the oxalic acid, which will not affect the absorption of calcium in the tofu.
(4) Spinach is not suitable for stir-frying pig liver: Pig liver is rich in metal elements such as copper and iron. Once combined with spinach which contains high vitamin C, metal ions can easily oxidize vitamin C and lose its nutritional value. Animal livers, egg yolks, and soybeans are rich in iron, and should not be eaten with amaranth and spinach that contain more oxalic acid. (5) Spinach cannot be eaten with soybeans. If it is eaten with soybeans, it will inhibit the release of copper and lead to poor copper metabolism.
(6) Spinach cannot be eaten with calcium tablets. Spinach is rich in oxalic acid, and oxalate ions can easily form calcium oxalate precipitation after binding with calcium in the intestine, which not only hinders the body's absorption of calcium, but also easily forms stones. So spinach should be blanched in boiling water before eating. 3. Contraindications
