Squirrel Fish

Clean the fish, remove the fish head, and cut the fish into two pieces. Do not cut the tail as shown in the figure.

Both pieces of fish are cut into wheat ears and coated with starch.

Add oil to the pot and heat it to 60% heat, add the cut fish, and fry it until golden brown and out of the pot. The oil heats up to 80% hot and re-explodes.

Mix with a bowl of juice (soy sauce, sugar, white vinegar, starch water), add oil to the pot and add minced garlic to the bowl of juice, sand, and thicken.
