Steamed Anhui

Half of fresh anhui fish (steamed preferably with fish belly)

Wash it well and score a few strokes on the back. Rub the front and back of the fish with a little salt (do not use too much salt, because there will be more soy sauce in the back)

Put it on the steaming dish, add some wine, sprinkle with ginger, and marinate with garlic for ten minutes.

Put it on the pot and steam it for ten minutes

Prepare some shredded green onions, garlic (if you don’t like too heavy garlic flavor, you can skip it), shredded red pepper

After steaming, sprinkle the ingredients, drizzle with soy sauce, heat the oil in a pot, and pour the oil on the fish.
